Château d’Yquem 2007 embodies the exceptional character of this Sauternes vintage.
Its sheath of light opens up like a golden book that encloses “all the aromas of the Garden of Eden” and all the emotions of this subtle, perilous and introductory season. Once again, it is a “grail of light” that “calls for silence and meditation”.
But it will have taken two months, seven sorts and sacrificing half the harvest for its incomparable richness, complexity and fineness to be reborn and as beautiful as those of 1997 or 1967.
A spicy, almost peppery freshness enhances the deep shine of its aromas of peaches, honey and quince that are tenderly roasted by the October sun. Its mineral notes, which are a source of strength, purity and longevity, distinguish it from all the other Sauternes.
