The Marc Sibart's bio consciousness face to the 'wine tsunami'

'Tendency is to real wines with real flavours', does he announce from the outset. According to the wine merchant, wines by oenologists, ingenious chemists but mediocre wine makers far away from the soil logics, less and less please. 'A morgon wine here sold at 15 euros will be sold at 6 euros in a hypermarket'. But it is obviously not the same one! 'It would be better if we drink less, but better'. 'Character' wines today are much sough-after. Is that the reason why foreign wines are so successful? According to Marc Sibart, the answer is negative, as this market is clearly insignificant for his wine cellars. 'The wolf is not foreign wine; this is the way of behaving of some of the French wine makers. For less than 5 euros, we have mechanical harvest, exogenous weeding and chemical yeasts'. Do not doubt anymore, the wolf is in the sheepfold and participates also to the 'wine tsunami'. And, as a well-advised customer, you do not have any right to be crunched anymore… Concerning cooking, Marc Sibart, as a wise man, advices 'to stay simple'. You should prefer a fresh lobster with muscadet rather than with chardonnay from Bourgogne! And, with oriental cooking, 'whatever you do, do not have tannic wines'
