Chablis producers bet on the promising 2005 vintage

Always imitated, but never equalled, Chablis is recognized everywhere around the world. And face to the Californian wines concurrency usurping its name on their labels, Bourgignon vineyard has only one answer: always doing better. In that sense, some serious houses like Simmonet Fevbre posed as guarantor for this quality. Created in 1840 and leaded by Jean-Philippe Archambaud, it vinifies a large range of wines arisen from the four appellations: Chablis, Petit Chablis, Grands Crus and Premiers Crus. Simmonet Febvre was recently bought by another great house, the one of Louis Latour, famous for its deep and harmonious white wines like Corton-Charlemagne or Montrachets and its red 'Bourgignon Tradition' like Château Corton Grancey. As for the 2005 vintage, it should take place among the most beautiful ones. 'September was the most beautiful of the last fifteen years in Chablis. That is a fact: climate is changing. Since a few years, we have lost a bit acidity and the alcohol level evolved' Jean-Louis Archambaud confides.
