Nothing ever changes in Mouton. Not at all ! To the contrary, the last years have been the chance to restore the prestige og the house’s style. Since 1995 the wine has found again a strictness, in the cultivation of the vineyard, in the harvest and in the winemaking, it did not know any more. The artisitic and prestigious label, decorating its bottles, also found their sense again. In 1855 it was a Deuxième Cru Classé, but from 1973 on it has been a Premier Cru Classé. So its device "Premier ne puis, second ne daigne, Mouton suis" (« First I can’t, second I don’t want, Mouton that’s me ») became "Premier je suis, second je fus, Mouton ne change" (« First I am, second I was, but Mouton doesn’t change »).
